Green Rabbit prisas för sitt hållbarhetsarbete av La Liste Pastry Awards 2025

Stockholm, 24 juni 2025 – Green Rabbit, Mathias Dahlgrens rågbrödsbageri i Stockholm, har tilldelats det prestigefyllda internationella priset Pastry Ethical & Sustainability Award vid La Liste Pastry Awards 2025.

La Liste är en global ranking som samlar och väger samman bedömningar från hundratals erkända matguider, kritiker och experter för att lyfta fram världens bästa restauranger och konditorier. Priset för hållbarhet ges till ett konditori som visar exemplariskt engagemang för etiska inköp, socialt ansvar och hållbara arbetsmetoder, ett erkännande av Green Rabbits ledande roll i att driva konditoribranschen mot en mer hållbar framtid.

– Att en internationell aktör som La Liste uppmärksammar vårt hållbarhetsarbete på vårt bageri i Stockholm betyder mycket. För oss handlar det om att ta ansvar och vårda råvarorna utan att tumma på kvaliteten eller smaken. Vi vill kunna baka bröd och bakverk som smakar riktigt gott, inte bara idag utan också i framtiden, säger Mathias Dahlgren.

Green Rabbit grundades 2014 av den prisbelönte kocken Mathias Dahlgren med en tydlig vision: att lyfta fram nordiska råvaror och hantverksmässigt bröd med respekt för miljön. Bageriet använder till största del mjöl från mindre svenska kvarnar och från ekologiska gårdar, vilket ger brödet och bakverken en fylligare och mer smakrik karaktär. Bageriet på Tegnérgatan kombinerar gamla hederliga recept med nya idéer och lekfullhet. Här bakas bröd med kärlek av råg, men också med nyfikenhet på ovanliga spannmål.

Hos Green Rabbit finns något för alla smaker, från enklare frukostfavoriter till goda soppluncher och deras variant av smørrebröd. Green Rabbits bröd kan också avnjutas på Mathias Dahlgrens restauranger Matbaren, Seafood Gastro och The Sparrow Bistro i Stockholm.

La Liste Pastry Awards samlar några av världens främsta konditorier och priset understryker vikten av att driva branschens utveckling mot ett mer hållbart och ansvarsfullt sätt att baka och skapa.
